Spiced Apples and Tequila! ....a not pumpkin spice cocktail recipe

I am never ready to relinquish my summer tequila cocktails, so, in honor of fall and the apple harvest, I have created this delicious Spiced Apple Margarita. It's the best of both worlds with one foot firmly planted in the last days of summer, and the other foot tip-toeing into fall (but not all the way into pumpkin spice yet!)

This cocktail is strong in a tequila flavor, but just enough of the apple flavor shines through.  It's perfection!

Spiced Apple Margarita

You will need;

Either a Vitamix, or any high-speed blender for making the apple purée. A heavy-bottomed saucepan, and cocktail/margarita glasses. I used coupes in the photos.

**note: this recipe makes 4 coupe glasses

Ingredients;

1 large Apple, I used Honeycrisp
Brown Sugar
Salt
Rim salt, such as Malden Sea Salt Flakes
Ground Cinnamon, and also as an option, Cinnamon sticks for decoration
Nutmeg
Cardamom
Ginger

 

Method;

In a saucepan, mix and bring to simmer-
1 large apple, chopped
1 C. water
4 T Brown Sugar
1 T ground Cinnamon
1/2 t. Nutmeg
1/4 t. ground Ginger
Pinch of ground Cardamon

Simmer this until the apples are tender.  Transfer to mixer and mix on high until it is puree consistency. Put aside and let it cool to room temperature.

For the cocktail mix;

4 1/2 oz. fresh lime juice

6 oz. Tequila

4 oz. Cointreau

8 oz. Apple purée 

Shake extra long in a shaker of ice, pour into rimmed margarita glasses, or your preferred vessel. 

For the rims, make a mixture of half brown sugar, and half salt flakes.  Dip your glass rims into a saucer of water, and then into the sugar-salt mix.  Garnish with apple slices and cinnamon sticks.
